Coconut Margaritas

Coconut Margaritas!
Apparently I’m all about coconut this week! Which is funny because I didn’t even realize it until I typed the title of this post.

It’s been one of those weeks where I’ve been pretty productive at work, but everything else has been kind of crazy! So I’m really looking forward to this weekend. And do you know how I like to celebrate Fridays and the weekend?

Coconut Margaritas!
That’s not really a surprise, though. Margs 4 lyfe. ♥

Ever since I got my new blender, I’ve been dying to make as many flavored margaritas as possible. New ideas pop into my head all the time, so I keep a list on my phone. Pretty sure watermelon needs to happen next. And then probably something with peaches.

I made Strawberry Coconut Margaritas once, and ever since then I’ve wanted to give the coconut layers their own post. Strawberry is always good, but the coconut was the real star in those margs. And I really just liked the idea of a solid white margarita.

The only other margs I’ve made for the blog are these Raspberry Beergaritas, but these Coconut ones have got the other two beat. They’re definitely the best I’ve made so far!

I knew these were good, but my dad, who I’ve never seen drink a margarita before, loved these. After I photographed them, I put them in the freezer for later. My mom doesn’t like tequila, sooo more margs for us! So my dad and I had one, then the next day he had another one. And THEN he was like, “Are you going have this last one?” And I was like, “Are you trying to drink my margarita? Is that what’s happening right now?”

And now I feel bad because I never drank it, haha. Something about coming home from the gym after work and then drinking a margarita didn’t feel right. Which is the only time it shouldn’t feel right. Margaritas the rest of the time!

These margaritas are really easy to make. The only thing you should know about them is that the recipe calls for coconut cream, which can be found on the wine/alcoholic drink mixes aisle. I think people typically use it to make pina coladas, but it works for margs too. 🙂

Happy weekend, friends!
