
So, having said that, I think it’s safe to say that these are the tastiest cookies I’ve ever made!

What’s great about Asheville is that everything there is so local and farm-to-table. At French Broad Chocolates, they directly import all of their cacao beans directly from Nicaragua and make the chocolate themselves! Our tour guide described it as Willy Wonka for adults.
So we got one of these massive chocolate bars in our swag bag, and I knew I needed to make something really awesome with it.

After I got back home and started brainstorming about cookies, I knew I HAD to use the French Broad Chocolate in the recipe. That way these cookies would be extra special! Bean-to-bar chocolate in cookies that will help raise money for finding a cure for kids’ cancer. Oh yeah.

You don’t need to chill this cookie dough because it’s pretty thick. Just scoop it into balls an bake! The batter doesn’t spread out much in the oven, which makes these cookies extra thick, but still chewy. I pressed a couple chocolate chips to my dough just before baking, just because I really love biting into a cookie with melty chocolate in it. <3

ingredients
- 1/4 cup butter
- 1/4 cup chocolate, chopped
- 1/2 cup granulated sugar
- 3 tbsp Hershey's Special Dark cocoa powder
- 1 tsp vanilla
- 1 egg
- 2 tbsp milk
- 1/4 cup + 2 tbsp all purpose flour
- 1 1/4 cup butter, softened
- 1/2 cup creamy peanut butter
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 1 tsp vanilla
- 1 egg
- 2 cups all purpose flour
- 1 tsp baking soda
- 1/2 tsp cornstarch
- 1/2 tsp salt
- 1/3 cup chocolate chips
instructions
- Preheat the oven to 350 degrees and spray a 9x13 inch pan with non-stick spray.
- In a measuring cup or microwave safe bowl, microwave the butter for 20 seconds. Stir, and then microwave for another 15 seconds.
- In a medium sized bowl, combine the melted butter and chopped chocolate. Whisk until all the chocolate has melted and the mixture is smooth. Next, whisk in the sugar, cocoa powder, and vanilla. Add the egg and whisk until incorporated. Then add the milk and flour and whisk just until combined.
- Pour the brownie batter into the prepared pan and spread out with a spoon. (The batter should be super thin in the pan!) Bake for 15 minutes or until set around the edges and in the center. Let the brownies cool completely, then slice into 1/2 inch squares.
- In the bowl of a stand mixer with the paddle attachment, beat butter and peanut butter on medium speed until smooth and creamy. Add both sugars and mix until fluffy. Add the vanilla and egg and mix well.
- In another bowl, whisk together flour, baking soda, cornstarch, and salt. Add half the flour mixture to the cookie dough and mix well. Repeat with the second half.
- Next, fold in the brownie chunks. (The dough will be pretty thick, so just fold the brownie in as best as you can. You kind of have to press it all together until it's evenly spaced throughout.)
- Preheat the oven to 350 and line a baking sheet with parchment paper or a silpat. Using a cookie scoop, scoop out dough and roll into balls. (You may need two baking sheets or bake two rounds of cookies.) If you want your cookies to look pretty, you can press a square or two of brownie and a few chocolate chips on each ball of cookie dough before baking. Lastly, lightly press the balls of dough to flattened them out a little bit. (The dough doesn't spread very much, so this helps.)
- Bake for 10-11 minutes, or until slightly golden brown around the edges. Let the cookies cool for 5 minutes, and then enjoy them warm!
