I’ve been in a bit of a blogging rut recently, friends. Honestly, I feel like I’ve been struggling with it since the beginning of the summer. Whenever this happens, it’s usually because I’ve tried to be too fancy with things. Too over-the-top. It’s because my brain has shifted from making things for fun to making things that will do well on social media and will get tons of likes and all of that. Sometimes this whole blogging thing gets away from me and I have to reel it back in.

Whenever that happens, I always try to go back to cake. I started blogging because I made cakes for my friends and my family and it was fun for me. But this time, that didn’t work. I would think about baking, and it would just make me feel tired before I’d even done anything.

To be honest, my friend and I have been hitting the gym after work several days a week to try and get in shape. Because of that, I think I’ve gotten to this point where I almost don’t want to go through the whole baking, photographing, and blogging ritual just to have a cake sitting in my kitchen staring at me.

A few posts ago, I mentioned that I will be adding some non-baking recipes to the blog, and I think the best way to combat this whole “in a rut” thing may be to experiment with different kinds of content. Even outside of food! During my little baking vacation, I picked up a couple of new hobbies, and I figured this blog could go from being a creative outlet for my sweet tooth to being my outlet for all of the things I like. Writing, photography, watercoloring, DIY, and maybe even some music! (I finally started taking guitar lessons, which has been on my New Years’ Resolutions list for like the last 4 years 😛 )

All of this is really just to say that I’m back from my little break, and I’ve got some new ideas that I’m really excited about and hope you all will like!

The Ultimate Funfetti Layer Cake
 
Ingredients
funfetti cake
  • 2 cup all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1 cup butter, softened
  • 1½ cup sugar
  • 4 large egg whites
  • 1 tsp vanilla
  • 1 tsp butter flavoring
  • 1 cup whole milk
  • ½ cup rainbow jimmies
birthday cake frosting
  • 1½ cup butter, softened
  • ½ cup dry white cake mix
  • 2 Tbsp milk
  • 1 tsp vanilla
  • 3 cups powdered sugar
  • 2 Tbsp rainbow jimmies
pink drips
  • 1 package pink candy melts
  • ¼ cup heavy cream
Instructions

  1. Preheat oven to 350°F and line two 8-inch or three 6-inch cake pans with parchment paper. Spray pans and parchment with cooking spray.
  2. Whisk together four, baking soda, and salt in a bowl and set aside.
  3. Cream butter on medium-high speed with an electric mixer or stand mixer. Add sugar and mix until fluffy
  4. Add egg whites, vanilla, and butter flavoring; mix well.
  5. Add half of flour mixture and half of milk to sugar mixture. Mix until ingredients are just combined. Add remaining flour mixture and milk; mix until completely combined.
  6. Stir in rainbow sprinkles, stirring as little as possible to prevent the colors from bleeding.
  7. Divide batter among cake pans and bake for 25-28 minutes, or until cakes are lightly golden on top and a toothpick inserted into the center of each layer comes out clean.
  8. Let cakes cool in pans for 5-10 minutes. Transfer to a wire rack to cool completely.

  1. Cream butter on medium high speed until smooth and creamy. Add cake mix, milk, and vanilla. Mix until all ingredients are well incorporated.
  2. Add half of powdered sugar and mix well. Add remaining powdered sugar and mix until combined.
  3. Spread frosting between layers of cake. Add sprinkles to frosting and spread frosting around the outside of the cake. Reserve about a cup of frosting to pipe swirls on top of the cake, if desired.
pink drips
  1. Add pink candy melts and heavy cream to a medium sauce pan over medium heat. Stir continuously until melted and smooth. Remove from heat and let cool slightly. Use a piping bag or squeeze bottle to add the drips around the edges of the cake and spread more over the top of the cake.
  2. Once set, add swirls of frosting around the edges of the top of the cakes. Add sprinkles and cookie crumbles, if desired.

  • Also, I end up throwing out the yolks of an egg when not called for in a cake. Any ideas of what I could bake with the egg yolks?

  • I just made this cake and just pulled it out of the oven. They look pretty sad. The middle did not rise, it is sucken in. Any idea why?

    Just made for my friends birthday and of course it did not rise.
    Assuming it’s the baking soda, unfortunately I will not be attempting this recipe again.

  • Before you attempt the candy melt glaze Note: My candy melt glaze came out very runny. I used a full bag of candy melts and a half cup of heavy cream, as instructed. The picture with this recipe makes the glaze look MUCH thicker. Also I had a TON left over, I made an 8 inch cake, and didn’t even use half of the glaze. So maybe try half a bag of candy melts and less cream.

    • I wish I had seen your comment before attempting the glaze. I was able to salvage it by pouring out half, adding more melts, cornstarch, and powdered sugar. NO WAY she got the advertised results using what is listed.

      • Actually, I did get the advertised results using what is listed. I’m not sure why the glaze has been runny for most people, but I have lowered the amount of cream in the recipe to hopefully help. I’ll try to remake this when I can and update the recipe with any changes. I am just a human being, you know. Didn’t intentionally mislead anyone. I’m sorry the glaze didn’t turn out like the picture.

  • The ingredient list says “Baking powder” and the instructions say “Baking soda” it seems like a lot of baking powder. Which is it? Maybe that is why it didn’t rise? I have started the recipe and ran into this. Now I’m not sure what to do!
