Waffles to start off your Friday! I don’t know how this is the first time I’ve posted waffles on the blog, but I can tell you that it will happen more often. I feel like 2016 will be the year of bethcakes brunches. I have so many ideas. Brunch pizzas. Brunch cocktails. Tryna make a brunch cheesecake a real thing, but I’m not 100% on that yet.

I’m super excited to be working with Krusteaz today to bring you this Waffle French Toast Bake in order to properly celebrate National Hot Breakfast Month! Krusteaz baking mixes are seriously the easiest things to work with. For this French Toast Bake, I used their Belgian Waffle mix. I have this waffle maker (it’s like the cheapest one you can get at Target, but it does a bang up job) and the mix made a few more than you’ll need for this recipe. But you can just put them in a Ziploc bag and keep them in the freezer for when future waffles cravings attack.

This Waffle French Toast Bake is great for brunch, but I think we need to take a moment and talk about brinner. I think breakfast for dinner is a thing that should happen more often, especially because most breakfast foods are so easy and fast to prepare. If you know you’ve got specific weeknights that are gonna be crazy hectic–this is when you should be having brinner, friends. Krusteaz makes this even easier with their mixes: fluffy pancakes, waffles, muffins, cornbread (you can totally have cornbread for breakfast), and more. Just mix them up and serve with a side of fruit, bacon, sausage, eggs, yogurt, or whatever breakfast foods are your favorite!

You can make the waffles a day in advance and store them in an air tight container. Or you can go the overnight French toast bake route by preparing the whole thing, and storing it covered in the fridge overnight (or during the day if you’re doing the breakfast for dinner thang). Then just pop it in the oven the next morning. Finish it off with a drizzle of Browned Butter Maple Sauce (!!!!) and a dusting of optional (but really not optional) powdered sugar!

Waffle French Toast Bake with Browned Butter Maple Syrup

  • 1 box Krusteaz Belgian Waffle Mix
  • 1¼ cups milk
  • 3 large eggs
  • 2 tsp vanilla extract
  • 1 tsp cinnamon

  • ¼ cup brown butter (cooled, but still melted)
  • ½ cup maple syrup
  • ½ tsp vanilla
  • 1-2 tsp powdered sugar (optional)

  1. Prepare waffle mix according to package directions. Bake in a lightly greased waffle iron according to manufacturer's instructions. Let waffles cool. (You can do this step a day in advance! Just store waffles in an airtight container or Ziploc bag.)
  2. Preheat oven to 350*F and lightly grease a 9x13 inch pan with cooking spray.
  3. Whisk together milk, eggs, vanilla, and cinnamon.
  4. Arrange a layer of waffles in the bottom of the pan. Break waffles into halves or fourths and overlap if you need to.
  5. Pour half of milk/egg mixture over waffles. Top with another layer of waffles and remaining milk mixture.
  6. Cover and refrigerator for at least 2 hours, or overnight.
  7. Bake for 30-35 minutes or until lightly golden brown on top.

  1. Whisk together browned butter, maple syrup, and vanilla. After taking waffles out of the oven, immediately pour syrup mixture over waffles. Dust with powdered sugar before serving
*waffle mix will probably make more waffles than you can fit in a 9x13 inch pan. Freeze extras in a Ziploc bag for future brunches!
