As I mentioned in my previous posts, one of my major goals for 2020 is to branch out and share more than just the usual sweets on this blog. So smoothies! I’ve got some fun ones I really want to share. Starting with one of my go-tos!
Over the summer I was in this great daily exercise/eating healthier/lifestyle change rhythm and it made a pretty big difference in my life. I am not not not a morning person, but I was getting my booty out of bed and making it to the gym before work. I felt so productive! By the time I got to the office I felt like I’d already gotten so much done for the day.
And my post-workout breakfast of choice were these smoothies! I made them all the time. I’m sure my roommates hated me cranking up the blender at 7am, but it was really working for me!
I’ve since gotten away from that routine. I moved apartments and life things happened, as they do.
But it’s 2020!
And I have some major healthy lifestyle goals that I absolutely want to achieve. I’m a ridiculously picky eater (I’m a texture person??? Some fruits and veggies just have disgusting mouthfeels to me), and eating healthy it just one of those things that I make so hard for myself. 😂 I’m aware of it! Which is, as they say, the first step. And as everyone knows, smoothies are a great way to consume all that good-for-you stuff.
The recipe below is for one smoothie, which I did in my single serve cup with my blender. But if you want to make a big batch for multiple people you could double/triple everything! I include 1 tbsp of sweetener of your choice in the recipe, and you can use literally anything you want here or leave it out completely. And feel free to switch up the almond milk and yogurt. You can use whatever you have on hand! I also like my smoothies pretty thick, so add more liquid if you need it. Taste after blending and adjust to whatever your heart desires!

Blueberry, Banana, Almond Butter Smoothie
Equipment
- Blender
Ingredients
- 1 banana sliced and frozen
- 1/4 cup frozen blueberries
- 1 tbsp almond butter
- 1/3 cup unsweetened vanilla almond milk
- 1/4 cup nonfat plain greek yogurt
- 1 tbsp sweetener of your choice
- 1/2 tsp vanilla extract optional
Instructions
- For each smoothie, combine all ingredients in single serve blender cup. Blend for a couple of minutes, until smooth.
- Taste and add more almond milk, sweetener, almond butter, or blueberries as desired.
