
As a picky eater and someone who sticks her nose up at most green things, can you believe that I made zucchini bread? I’m guest posting over on Blahnik Baker today because Zainab recently had the cutest, little baby boy. She’s having some other bloggers help her out with guest posts while she’s on maternity leave. It’s no secret that Zainab’s favorite flavor is coconut, so I had to work it into a recipe for her. And to all my fellow picky eaters, give zucchini a chance, friends.
This zucchini bread is nice and soft, and it’s studded with little flakes of zucchini and shredded coconut. It’s also flavored with a little bit of lemon zest and fresh lime juice. Then a lime glaze is dumped over the top, and it’s ready to slice and serve!

Yum! I made zucchini bread yesterday and I love this coconut lime version, so tropical 🙂 Definitely heading over for the recipe!
