Just in time for your weekend: Lemon Snack Cake with Strawberries!
I know what you’re going to ask. What is a snack cake? How is it different from regular cake? We’ll I’ll tell you. It’s typically a one layer cake that’s just meant for—snacking. You know, like just because. It doesn’t have to have frosting, can be super simple, really just anything you like. But it doesn’t take the time and energy of a layer cake or need any fancy decorating. It’s great with your afternoon coffee or if you’re serving snacks for guests and want to include a little something sweet without overdoing it.
I tested this one a few times and originally drizzled a lemon glaze on top, then decided it was pretty darn good on it’s own. Plus that lets the strawberries really shine. 🤩
This cake is super easy to throw together too. It can all be mixed in one bowl and then you just pour into the pan and place the sliced strawberries on top! Easy peasy.
I will say that the strawberries work best if the slices are super thin. I originally tried this with halved strawberries, the cut sides facing up, and they totally sank into the batter while baking lol.
But the strawberries and lemon are so good together. Perfect spring flavors! And I absolutely love the way the strawberries look on top. I feel like you could really wow some guests if you decide to serve this to friends instead of hoarding it all for yourself (which is also a valid option).

One bowl: all the ingredients can be mixed together in one bowl, meaning less dishes for you! Of course you can use a stand mixer if you’d like, but I found it super easy to just use my hand-held electric mixer.
Fresh strawbs: I definitely suggest using fresh strawberries here!
Fresh lemons: I used fresh lemon juice and zest in this recipe, but you could use bottled if you’d like. There’s only 1/4 cup of lemon juice being used here, so that should be about one large lemon. If you do go the bottled route, I’d use something like Nellie and Joe’s. (I always have this in my fridge!)
Lemon extract: I used a teaspoon of lemon extract for a little extra boost of flavor, but if you don’t have that you can substitute vanilla extract.
Springform pan: I used a 9-inch springform pan to bake this cake so I could easily remove the cake from the pan without messing up the top. If you don’t have a springform pan, you can use a 9-inch round cake pan.

Lemon Snack Cake with Strawberries
Ingredients
- ¼ cup unsalted butter softened
- 1 cup granulated sugar
- 1 large egg
- ½ cup whole milk
- 1 tsp lemon extract
- ¼ cup fresh lemon juice
- ½ tbsp lemon zest
- 2 cups all-purpose flour
- ½ tsp baking soda
- 1 tsp baking powder
- ½ tsp salt
- ½ pint fresh strawberries thinly sliced
Instructions
- Preheat oven to 350°F and spray a 9-inch springform pan with baking spray.
- In a large bowl, cream butter and sugar until fluffy and pale in color. Add eggs; mix well. Add milk, lemon extract, lemon juice, and lemon zest; mix until combined.
- Add flour, baking soda, baking powder, and salt; mix until incorporated.
- Pour batter into the prepared pan. Arrange sliced strawberries over the top of the cake.
- Bake for 50 to 60 minutes. If the cake looks like it’s getting too browned on top, tent with foil. Remove from oven and let the cake cool completely.
- Serve with whipped cream or ice cream!
