One of the many wonderful things about my job is that pretty much everyone loves food. If you aren’t really into cooking or baking, you’re at least still into eating!
One of my friends at work is also really into baking. She used to blog, but she doesn’t anymore. (Which I think needs to change.) But at lunch one day we were talking about food, obviously, and she described this mint chocolate chip ice cream brownie thing with a crust made of mint chocolate cookies. I’m pretty sure I said something like, “UM, when can you make me this.”
We decided we needed to get together and bake one day since it’s sort of our thing. When deciding what we should bake, I immediately suggested the mint chocolate chip cookie brownie pie of mouthwatering-scrumptiousness.
My autocorrect is telling me these aren’t real words, but it’s also never had this pie. And trust me, that’s the only way to accurately describe this thing. It’s a mouthful, but it’s a delicious, creamy and melty mouthful.
Basically, it’s a mint chocolate cookie crust, topped with a minty + fudgy brownie layer, topped with a mint chocolate chip ice cream layer. Ready to make it now? Get the recipe here!
The crust is essentially made of Thin Mints, except they’re the Keebler version. Just as addictive. Plus you mix the cookie crumbs with (guess what?) butter.
The brownie layer is so fudgy and also has a splash of mint extract.
Bake the brownies until a toothpick inserted into the center comes out fairly clean. Let the brownies cool, or if you’re impatient like we were, go ahead and slap on the ice cream and put that baby in the freezer. It might just take longer for the ice cream to set.
Keep the mint chocolate chip ice cream in the refrigerator during this process. That way it will be much easier to spread out the ice cream when the brownies are done.
Once the ice cream is solid again, resist eating the entire pan of ice cream brownies in one sitting. Or you know, don’t. This is your brain-freeze warning, though.

It’s so awesome that your co-workers are as into food as you are! I need to find a job like that lol (everyone thinks the amount of time I spend on foodgawker is terrifying). And I need this pie! Holy cow! It looks so decadent and awesome, I think I could easily it it all on my own. 🙂
