It’s been a minute since I’ve shared a small batch recipe, but I’ve got the perfect scaled down treat for you today! Small-Batch Peach Cobbler. Yes! Perfect for summer and just what we need. It bakes in a loaf pan and serves two to four people depending on how big your servings are (this is a judgement free zone). If you’ve got a small family or need a quick dessert for a dinner for two, this is the perfect size!
The peaches are the star of the show here, but this recipe works well with pretty much any fruit. A variety of stone fruits, literally any berry, and even apples would all be wonderful versions of this one. I still have a giant bag of frozen strawberries in my freezer from strawberry picking earlier this summer, and I just might have to try this with them!
You can use fresh, canned, or frozen peaches here—it really doesn’t matter. This recipe works with whatever you’ve got on hand. Obviously, there’s nothing quite like some fresh summer peaches, but it’s completely up to you! If you use canned or frozen, just make sure to thaw, drain, and pat dry.
I baked this Small-Batch Peach Cobbler in a 9×5-inch loaf pan, but any similar sized pan should work. A few tablespoons of melted butter go into the bottom of the pan. Sugar-and-spice coated peaches go on top of that. And then the topping (which I just mixed up with my hands) is spooned over the peaches. It’s all topped off with a generous sprinkle of cinnamon and sugar.
Can we all agree that there is nothing quite like the smell of peach cobbler baking in the oven? Amazing. 😍

Small Batch Peach Cobbler
Ingredients
Peaches:
- 3 tbsp butter melted
- 1 ½ cups sliced peaches (about 2 peaches)
- ¼ cup packed light brown sugar
- ½ tsp ground cinnamon
- Pinch of ground nutmeg
- 1 tsp vanilla
- 1 tsp cornstarch
Topping:
- ⅔ cup all-purpose flour
- ¼ cup packed light brown sugar
- ½ tsp baking powder
- ¼ tsp salt
- 3 tbsp very cold butter
- ¼ cup water
- 1 tbsp granulated sugar
- ½ tsp ground cinnamon
Instructions
To make the peach filling:
- Preheat oven to 425°F. Grease a 9x5-inch loaf pan.
- In a bowl, combine peaches, sugars, cinnamon, nutmeg, vanilla, and cornstarch. Toss until peaches are evenly coated. Arrange in the bottom of the prepared loaf pan.
To make the topping:
- In another bowl, whisk together flour, sugar, baking powder, and salt.
- Grate butter and add to bowl. Using your hands or a pastry cutter, incorporate butter into dry ingredients until it becomes the texture of coarse meal. The mixture should be crumbly, but hold its shape when pressed together.
- Microwave water until it’s very hot, about 20 to 25 seconds. Add hot water to the bowl and stir until blended and a thick dough forms.
- Drop dough by large spoonfuls over the peach filling in the loaf pan. Spread with a rubber spatula or a spoon until peaches are mostly covered.
- Stir together 1 tablespoon granulated sugar and ½ teaspoon cinnamon. Sprinkle evenly over topping.
- Bake 20 to 25 minutes, or until topping is golden brown. Remove from oven and let cobbler cool slightly.
- Serve cobbler warm with vanilla ice cream.
