
I don’t know what to call them! Cocktails are more fun when they have an official name. Not just the ingredients listed out in the title. But these are pretty tasty, no matter what the name is. They’re perfect for fall, football games, cool evenings and tailgates.
These cocktails are made with Blue Chair Bay’s Spiced Coconut Rum. I know. I love coconut rum. It’s one of my favorite things. I just want to put that stuff in everything. Drinks, cakes, tacos, pizza. Just kidding.
But really.

Last year, my family took a beach trip in November. Typically we go in the summer, but we didn’t make it down there for whatever reason. My aunt and uncle have a beach house, so we finally got to go in the fall. And let me tell you, that was perfect beach weather. We took a walk on the beach and didn’t even break a sweat. It was bright and sunny, there was a little breeze, it wasn’t sweltering hot, and I didn’t get sunburned. Which is a miracle. We had a bonfire and football. It was perfect!
This recipe is inspired by that trip. Fall flavors with a little bit of a tropical twist. I like fruity and girly cocktails, and this is perfect if you do too! It’s a little on the sweeter side, which really shouldn’t be a surprise if you’ve followed this blog for any length of time. It’s also really simple and only requires four ingredients! So you really have no excuse for not making it. Especially because–after you scroll down past the recipe–you can win your very own bottle! Happy Friday, y’all!

ingredients
- Blue Chair Bay Spiced Coconut Rum (or just coconut rum)
- apple cider
- apple slices
- cinnamon sticks
instructions
- Fill a short glass with ice. Add 3oz of apple cider and 1oz Spiced Coconut Rum. Garnish with a couple of apple slices and a cinnamon stick. Use the cinnamon to stir the drink together.
- You can definitely adjust this based on the size of your glasses. Stick to a 3:1 or 4:1 ratio.
- Enjoy!

These were SO tasty and our next door neighbors loved them so much, they drank almost the whole pitcher! Good thing they walked over!

Whiskey cider has been my drink of choice this fall…but that was before I knew there was such a thing as spiced coconut rum?! I might just have to switch things up a bit!
