Today I’m sharing the recipe for these Strawberry Peach Daiquiris because it’s Friday Eve and this is what I did with the second half of the strawberries from this post! The gorgeous and delicious strawberries we picked at Sugar Hill U-Pick/Penton Farms!
Spoiler alert: I’m going to a different farm for more strawberry picking this weekend! Most u-pick farms here are nearing the end of strawberry season because of the heat, and I’m pumped to bring a few baskets home and stash them in my freezer so I can enjoy them allllll summer long.
Making daiquiris was actually my mom’s suggestion, and it was a good one. I also picked up some peaches at Penton Farms, and they were an excellent addition to these frosty drinks. They are absolutely perfect for this time of the year and I’m sure they’ll be even better later when the heat gets unbearable.
I washed, sliced, and ziploc-ed these gems and let them hang out in the freezer for a day or two so I could transfer them directly to my blender with some rum and lime juice. 😋 There are only three of us in this house, so it was nice having some of the extra daiquiris hiding in the freezer to enjoy over the weekend! We sat on the back porch and enjoyed these along with the unusually pleasant weather we’ve been having.
what you need
Frozen fruit: You’ll need some frozen strawberries and peaches. If you don’t have fresh, you can use pre-frozen here since it’s going straight from the freezer to the blender anyway. You can also obviously use whatever fruit/berry combo you want here, but the strawberries and peaches are super perfect for this time of the year!
Rum: A light rum works best here, but you do you. Whatever you’ve already got in your liquor cabinet will probably do!
Lime juice: Just a splash for a little extra flavor.
Sugar: I used about 1/4 cup sugar for the entire pitcher, and you can definitely use your sweetener of choice here. Also more or less depending on your preference!
Ice: After blending the main ingredients, I blended in some ice so these daiquiris would be extra cold and refreshing. This step isn’t necessary, just keep in mind that if you skip the ice, it may yield a smaller amount than what I’ve got listed in the recipe.
You can add some fresh fruit and mint leaves for garnish, if you like! I think it would not be a bad idea to have a pitcher of these in containers in the freezer, just sayin’.
Strawberry Peach Daiquiris
Ingredients
- 4 cups frozen strawberries
- 2 cups frozen peaches
- ½ cup light rum
- ¼ cup fresh lime juice
- ¼ cup granulated sugar more or less to taste
- 3 cups ice
- Fresh strawberries and peach slices for garnish
Instructions
- Combine strawberries, peaches, rum, lime juice, and sugar in a blender. Blend on high speed until all ingredients are well blended and incorporated, stopping to stir and scrape the edges if necessary. Add the ice and blend well.
- Pour daiquiris into glasses; garnish with fresh strawberries, peaches, and mint, if desired.
- One pitcher makes about 4 to 6 larger drinkes, and 6 to 8 smaller drinks.All images and text ©Bethcakes.
