Lemon Snack Cake with Strawberries

  • ¼ cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • ½ cup whole milk
  • 1 tsp lemon extract
  • ¼ cup fresh lemon juice
  • ½ tbsp lemon zest
  • 2 cups all-purpose flour
  • ½ tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ pint fresh strawberries thinly sliced


  • Preheat oven to 350°F and spray a 9-inch springform pan with baking spray.
  • In a large bowl, cream butter and sugar until fluffy and pale in color. Add eggs; mix well. Add milk, lemon extract, lemon juice, and lemon zest; mix until combined.
  • Add flour, baking soda, baking powder, and salt; mix until incorporated.
  • Pour batter into the prepared pan. Arrange sliced strawberries over the top of the cake.
  • Bake for 50 to 60 minutes. If the cake looks like it’s getting too browned on top, tent with foil. Remove from oven and let the cake cool completely.
  • Serve with whipped cream or ice cream!
