Whisk together dry ingredients: flour, baking powder, and salt. Add remaining ingredients: egg, vanilla, honey, milk, banana, and peanut butter. Whisk until combined. Stir in chocolate chips.
To make the waffles, pour just enough batter to cover the waffle maker. (I used a 3 tablespoon cookie scoop and spread to cover.) Sprinkle with more mini chocolate chips if desired. Let the waffles cook for about 3-5 minutes, or until golden brown on both sides. Repeat with remaining batter.
Serve with syrup, bananas, and extra peanut butter if desired!
