Red Velvet Cookies and Cream Brownies

  • ¾ cup unsalted butter melted
  • 1 ½ cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 - 1 ½ tbsp red gel food coloring
  • 1 ¼ cup all-purpose flour
  • 3 tbsp unsweetened cocoa powder
  • ½ tsp salt
  • 2 cups quartered chocolate sandwich cookies
  • 1 cup quartered chocolate sandwich cookies for the top


  • Preheat the oven to 350°F. Spray an 8x8” baking pan with baking spray and line with parchment paper.
  • In a large bowl, whisk together melted butter and sugar until smooth and glossy.
  • Add eggs and whisk until incorporated. Add vanilla extract and food coloring; whisk until evenly distributed throughout.
  • Add flour, cocoa powder, and salt; mix until just combined. Fold in cookies.
  • Pour batter into the prepared pan and sprinkle top with additional chopped cookies.
  • Bake for 45 minutes, or until a toothpick inserted into the center comes out clean. Let brownies cool completely before slicing and serving. Store covered at room temperature.
