Squeezing in one more post for Valentine’s Day! Sort of. This Brown Sugar Cinnamon Dutch Baby, aka the giant pancake of my dreams, would be the perfect addition to any weekend brunch, but would also be a great way to kick off Valentine’s Day!
How would you like to wake up to the smell of coffee brewing and cinnamon-sugar wafting from the kitchen? Dreamy, right!
I haven’t made one of these in forever, and I was almost surprised to realize how simple they are to make! Combine all the ingredients in a blender, pour in a skillet, and let it bake! It’s that easy. Also frees up the stovetop if you’re cooking other things for your brunch spread.
This pancake has brown sugar and cinnamon in the batter, plus additional brown sugar and cinnamon sprinkled on top before it goes into the oven. I topped it with some extra cinnamon, whipped cream, and of course, plenty of syrup. Dutch babies also look great filled with assorted fruits! So add whatever you like to seriously impress your sweetheart (or yourself!).
To majorly upgrade this bad boy, you could arrange some apple slices in the bottom of your skillet before pouring in the batter. I am 100% trying this next time.

Brown Sugar Cinnamon Dutch Baby
Ingredients
Topping
- 1 tbsp dark brown sugar
- ½ tsp ground cinnamon
Dutch Baby
- 3 large eggs
- ½ cup all-purpose flour
- ½ cup whole milk
- 1 tbsp dark brown sugar
- ½ tsp ground cinnamon
- ½ tsp vanilla
- Pinch of salt
- 2 tbsp unsalted butter
Instructions
- Stir together brown sugar and cinnamon for the topping, making sure to break up any clumps of sugar.
- Combine eggs, flour, milk, brown sugar, cinnamon, vanilla, and salt in a blender. Blend for a few seconds, then stop to scrap the inside of the blender. Blend for 10-15 more seconds.
- Let the batter rest in the blender for 15-20 minutes. This will help the flour absorb all of the liquid.
- Preheat oven to 425°F. Place 2 tablespoons of butter in the skillet and put the skillet in the oven. Once butter is melted, remove skillet and swirl so the butter coats the bottom and sides. Pour batter into the skillet and sprinkle with brown sugar cinnamon topping. You can press the topping through a mesh sieve to get an even sprinkle, if you’d like!
- Bake for 15-18 minutes, or until puffed and golden brown. Remove from oven, cut into slices, and serve with additional cinnamon, whipped cream, and syrup.
